摘要 曲为酒骨,大曲质量的优劣直接影响白酒的产量、质量与风格,科学的大曲质量鉴定体系显得尤为重要。本文首次提出入库曲质量管控,创新构建入库曲和出库曲质量评定体系,新评定体系不仅具有很强的可操作性,而且评判也更加公正精准,对于中高温大曲质量控制、工艺改进、品质提升等都具有积极的指导意义,也有可供同行参考借鉴之处。 The quality of Daqu directly affects the yield,quality and style of Baijiu.Therefore,a scientific quality evaluation system of Daqu is particularly important.In this paper,the quality control of store-entry Daqu is proposed for the first time,and a new quali-ty evaluation system of store-entry Daqu and store-exit Daqu is constructed.The new system not only has strong operability,but also is more accurate.This study has guiding significance for the quality control,process improvement and quality improvement of medi-umhigh-temperature Daqu,and can provide certain reference for peers.
