清代以来苏式面条发展研究

On the Development of Suzhou-style Noodles Since the Qing Dynasty

摘要 苏式面条风味特色鲜明,吴文化气息浓郁,在中国面条文化中占有重要的地位。清代,苏州创建面业公所,苏式面条声名鹊起,精选原料、讲求时令、擅长捞面,面条制作技艺日益发展。民国时期,苏式面条逐渐形成面以浇变、吃法多样、响堂服务等特色。改革开放后,苏州面馆业发展迅猛,树名店名面品牌形象,苏式汤面挑战世界纪录,申遗成功。 Suzhou-style noodles have a long history and rich cultural connotation.Since noodle restaurant association was established in Suzhou in the Qing Dynasty,Suzhou-style noodles,careful in selecting raw materials,particular about ingredients in season and good at fishing noodles,have earned a good reputation.The noodle making technology was improving with the passage of time.During the period of the Republic of China,Suzhou-style noodles gradually developed various characteristics,such as noodles with different toppings,diversified eating arts,and the service of“yelling out the name of the noodles”.Since the Reform and Opening-up,Suzhou noodle industry has been developing rapidly,with the brand image of famous shops and noodles established.Suzhou-style soup noodles have set a world record and have been enlisted as a World Intangible Cultural Heritage.Suzhou-style noodles,with distinctive flavor and strong Wu culture,play an important role in Chinese noodle culture.
