摘要
目的监测丽水市灵芝从种植到终端产品全过程中11种痕量元素的分布情况。方法样品通过微波消解,采用电感耦合等离子体质谱法测定10种元素,汞元素采用原子荧光光度法测定。结果检测的所有元素线性关系良好(r>0.999)。种植采收环节的灵芝会吸收环境中的痕量元素,且菌盖与菌柄对不同的元素有不同的富集能力。加工环节的粗磨、精磨步骤会引入铜元素,水提步骤则会富集铬、镍、砷、硒、镉。结论丽水市灵芝及深加工产品的食用安全性总体良好,深加工过程中的水提步骤会富集砷、镉、铅三种重金属元素,需注意防止重金属污染物通过水提步骤富集而产生食品安全隐患。
Objective To monitor the distribution of 11 trace elements in the whole process of Ganoderma lucidum from planting to end products in Lishui City.Methods The samples were digested by microwave.Ten elements were determined by inductively coupled plasma mass spectrometry,and mercury was determined by atomic fluorescence spectrometry.Results All the detected elements have a good linear relationship(r>0.999).Ganoderma lucidum in the planting and harvesting process will absorb trace elements in the environment,and the cap and stipe have different enrichment capabilities for different elements.The rough grinding and fine grinding steps of the processing link will introduce copper element,and the water extraction step will enrich chromium,nickel,arsenic,selenium,and cadmium.Conclusion The edible safety of Ganoderma lucidum and its deep-processed products in Lishui City is generally good.The water extraction step in the deep-processing process will enrich the three heavy metal elements of arsenic,cadmium,and lead.Attention should be paid to prevent heavy metal contaminants from being enriched by the water extraction step to cause food safety hazards.
