保健酒的配制及其羟基自由基清除率的测定 被引量:5

摘要 以罗丹明B(RB)为显色剂,在酸性条件下芬顿(Fenton)体系产生的羟基自由基(·OH)能够迅速氧化RB使其溶液在554 nm处吸光度下降,可测定·OH的产生量;保健酒具有消除·OH的功能,使溶液吸光度下降的程度削弱,保健酒加入体系前后吸光度的差值(ΔA)与保健酒对·OH的清除率成正比,以此建立了·OH清除率的评价方法。通过从4种药食同源的山西道地药材中筛选出2种·OH清除率高的药材为原料配制成保健酒,并对其·OH的清除率进行测定,与市售相同酒精度数某品牌保健酒相比,含有山西道地药材的保健酒能达到或略高于市售保健酒抗氧化性要求。 In order to evaluate the clearance rate of hydroxyl radical(·OH)in health wine,rhodamine B(RB)was used as chromophore for the investigation.The·OH produced by Fenton system under acidic conditions can rapidly oxidize RB and reduce the absorbance at 554 nm in solution.Health wine which can eliminate·OH to prevent the reduction of the RB absorbance of the solution.Difference of absorbance(ΔA)before and after adding health wine into the system is directly proportional to the clearance rate of·OH by health wine.Two high·OH clearance rate herbs with homology of medicine and food were selected from genuine Shanxi herbs as raw materials to prepare health wine in our experiments.Compared with the commercially available health wines,health wines with well-chosen Shanxi herbs presented the similar or higher·OH clearance rate.
