摘要
"缸炉"本义是炉具,它在中国食物烘烤历史上发挥了十分重要的作用。以缸炉烘制的食品,一些直接用"缸炉"二字修饰,如缸炉烧饼、缸炉煨汤;一些则直接借指特定的点心,如昔日北京的缸炉、破边缸炉、圆边缸炉、七宝缸炉。"老北京缸炉"曾经承载着丰富的地方文化内涵,如今基本上消亡。对缸炉这一事物进行比较系统的阐释、总结,可以有助于了解、传承中国饮食和民俗文化。
"Ganglu,"originally referring to a kind of stove,is a tool of great importance in the bakery history of China. Some foods cooked with it simply use its name as the modifier,such as ganglu cake or ganglu stew,while others directly use it as their names(usually with other modifiers),such as ganglu,pobian(broken-rim) ganglu,yuanbian(round-rim) ganglu or babao(eight-treasure) ganglu."Old-Beijing ganglu,"a local snack once laden with rich traditional culture,has virtually disappeared by now. A systematic introduction to and summary of ganglu and other related topics may,hopefully,help understand and inherit traditional food and folk culture.
