摘要
以石嘴山、银川、永宁、青铜峡、红寺堡5个不同产地的25个代表性‘赤霞珠’葡萄酒样品为原料,采用顶空-固相微萃取结合气相色谱质谱(HS-SPME-GC-MS)技术,分析不同产地‘赤霞珠’葡萄酒挥发性香气物质差异性。结果表明,25个葡萄酒样品共检测出103种挥发性物质,其中醇类物质29种,乙酯类物质20种,乙酸酯类物质8种,其他酯类物质14种,萜烯类8种,醛类物质7种,酮类物质3种,酸类物质8种,醚类物质2种,其他类4种,不同地区‘赤霞珠’葡萄酒主要香气种类基本相似,含量差异较大。通过正交偏最小二乘判别分析(OPLS-DA),确定了区分不同产地‘赤霞珠’葡萄酒的主要特征标志物(变量重要性投影(VIP)>1)17种。OPLS-DA结合层次聚类分析(HCA)能够将不同产地‘赤霞珠’葡萄酒很好区分。
Using 25 representative'Cabernet Sauvignon'wines from 5 different producing regions in Shizuishan,Yinchuan,Yongning,Qingtongxia and Hongsibao as raw materials,the differences of volatile aroma substances in'Cabernet Sauvignon'wines from different producing regions were analyzed by headspace-solid phase microextraction combined with gas chromatography mass spectrometry(HS-SPME-GC-MS).The results showed that a total of 103 volatile substances were detected in 25 wine samples,including 29 alcohols,20 ethyl ester,8 acetate,14 other esters,8 terpenes,7 aldehydes,3 ketones,8 acids,2 ethers,and 4 others.The main aroma types of'Cabernet Sauvignon'wines in different regions were basically similar,but the content was greatly different from each other.17 main characteristic markers(variable importance projection(VIP)>1)were identified to distinguish'Cabernet sauvignon'wines from different regions by orthogonal partial least squares discriminate analysis(OPLS-DA).OPLS-DA combined with hierarchical cluster analysis(HCA)could greatly distinguish'Cabernet Sauvignon'wines from different regions.
