摘要 益生菌是一种有益于人体肠道的生理菌群,能够有效预防高血压、高血脂以及糖尿病等多种疾病,同时在癌症预防方面也有显著效用。由于益生菌具备良好的营养保健功能,因而目前已逐渐应用于食品领域,在保健食品、功能性食品以及食品添加剂制作等方面均有所应用,并且极受消费者青睐。本文从益生菌的来源及种类划分入手,进一步探析了益生菌的营养保健功能,从食品中可应用的益生菌类型、应用方式、应用安全性以及应用方向4个方面分析了食品中益生菌的具体应用,旨在为食品中益生菌效用发挥、应用范围拓展等深入的研究起到一定的参考作用。 Probiotics are one of the physiological bacteria that is beneficial to the human gut,which can effectively prevent various diseases such as hypertension,hyperlipidemia and diabetes,and also have significant utility in cancer prevention.Because probiotics have good nutrition and health function,they have been gradually used in the field of food,used in health food,functional food and food additives,and are highly favored by consumers.This paper from the source and type of probiotics,further explore the probiotics nutrition health function,from the food probiotics type,application,application safety and application direction analyzed the specific application of probiotics in food,aims to play the utility of probiotics,application scope of research to play a certain reference role.
