摘要
以深海鱼胶原蛋白和水果酵素为原料,添加山楂汁、苹果汁、低聚半乳糖、L-苹果酸、柠檬酸、三氯蔗糖等研发出一款营养丰富、酸甜可口的胶原蛋白酵素饮品。通过工艺优化得到的最佳配方:深海鱼胶原蛋白5.0%、水果酵素5.0%、山楂汁1.0%、苹果汁0.6%、低聚半乳糖0.3%、L-苹果酸0.08%、柠檬酸0.08%、三氯蔗糖0.005%。此外,通过体外消化率试验和抗疲劳试验,进一步验证了胶原蛋白酵素饮品的相关优良性能。
A nutrient-rich collagen enzyme beverage,which had a sweet and sour taste,was developed with marine collagen and fruit enzyme as main raw material,adding haw juice,apple juice,galactooligosaccharides,L(-)-Malic acid,citric acid and sucralose as accessories.According to the processing optimization,the optimal formula was marine collagen 5.0%,fruit enzyme 5.0%,haw juice 1.0%,apple juice 0.6%,galactooligosaccharides 0.3%,L-malic acid 0.08%,citric acid 0.08%and sucralose 0.005%.In addition,the vitro digestibility test and anti-fatigue test were used to further verify the excellent performance of collagen enzyme beverage.
