蓝莓营养指标与矿质元素关联度分析和主成分分析 被引量:1

Analysis of Nutritional Components of Different Varieties of Blueberry

摘要 为分析不同品种蓝莓果实中营养指标与矿质元素之间相互关系,探究不同品种蓝莓的品质。利用偏最小二乘法(PLS)、主成分分析(PCA)等方法对数据进行统计分析。结果表明:矿质元素与蓝莓果实中总酸、总糖、总酚、花青素、维生素C有很好的拟合效果,其中Cu和Zn对总酸、总糖和总酚的影响比较显著,Cu元素有利于蓝莓果实中总酸和总酚的积累,不利于总糖的积累;Zn元素不利于蓝莓果实中总酸和总酚的积累,有利于总糖的积累;Mg元素和Mn元素分别对蓝莓中花青素和维生素C的积累产生消极的影响。通过主成分分析,蓝莓的15项营养指标被划分为3个主成分,累计贡献率为84.622%,分别反映果实的营养物质质量分数、外观品质和颜色,综合评分表明N18、N21品质较好。 In order to analyze the relationship between nutritional indexes and mineral elements in different varieties of blueberry fruits,the quality of different varieties of blueberry was explored.Partial least squares method(PLS) and principal component analysis(PCA) were used to analyze the data.The results showed that the mineral elements had a good fitting effect with the total acid,total sugar,total phenols,anthocyanins and vitamin C in blueberry fruit,and Cu and Zn had a significant effect on the total acid,total sugar and total phenols in blueberry fruit.Cu element was beneficial to the accumulation of total acid and total phenols in blueberry fruit,but unfavorable to the accumulation of total sugar.Zn was not beneficial to the accumulation of total acid and total phenol in blueberry fruit,but was beneficial to the accumulation of total sugar.Mg and Mn had negative effects on the accumulation of anthocyanin and vitamin C in blueberry.According to the principal component analysis,the 15 nutritional indexes of blueberry were divided into three principal components with a cumulative contribution rate of 84.622%,which respectively reflected the nutritional content,appearance quality and color of the fruit.The comprehensive score showed that the quality of N18 and N21 was better.
