物流过程温度波动对猕猴桃贮藏品质的影响

摘要 以金艳猕猴桃为材料,在冷库中进行变温处理,用自动温度记录仪监测猕猴桃处理全程温度变化,将果实贮藏在恒定温度下,定期测定CO_(2)、C_(2)H_(4)释放量与品质指标,研究猕猴桃物流中温度波动对贮藏品质的影响。结果表明,温度波动对果实CO_(2)、C_(2)H_(4)释放、可溶性固形物、可滴定酸影响较小;对硬度、失重和透明化有较大影响;5℃的温度波动产生的影响较大,3℃的温度波动产生的影响较小。温度波动对贮藏前期的影响显著,对贮藏后期的影响减弱。 To study the effect of temperature fluctuation on storage quality of kiwifruit during logistics,Kim yeon kiwifruits were treated with variable temperature in the cold storage.The automatic temperature recorder was used to record the temperature changes.The fruits were stored at a constant temperature and the quality indexes,the release amount of CO_(2) and C_(2)H_(4) were measured.The results showed that temperature fluctuation had little effect on the release of CO_(2) and C_(2)H_(4),soluble solids and titratable acid.It had a great influence on firmness,weightless and transparency.Temperature fluctuation at 5 ℃ had greater effect on kiwifruit quality than that of 3 ℃.The effect of temperature fluctuation was significant on the early storage stage fruits,and was weak on the later storage stage fruits.
