摘要 我国肉鸡养殖规模不断扩大,专业化程度不断提高,鸡肉消费量连续多年稳居世界第二。然而,当前主流品种"快大型"肉鸡的肉质不佳,肌肉缺陷症的发生率逐年增高,优质鸡肉的市场缺口不断扩大,难以满足我国肉品消费升级的需求。改善鸡肉品质成为推动鸡肉供给侧改革所亟待解决的难题。文章从饲养模式、饲粮营养、屠宰环节等方面综述了鸡肉品质调控的研究进展,为实际生产中改善鸡肉品质提供借鉴,也为相关科研工作提供思路。 The scale and specialization of broiler production in China continue to expand,and the consumption of chicken has been ranked second in the world for many years.However,the meat quality of the main breed"Quick and Large"in broiler industry nowadays is poor,and the incidence of meat defects of chicken is continuously increasing in recent years.It finally causes a constantly expanding gap between the market demand and supply of high-quality chicken,which is insufficient to meet the upgrade of China′s meat consumption.Therefore,the improvement of meat quality of chicken by dietary nutrition regulation is a mission that needs to be conducted urgently to promote the supply-side reform of chicken.This article summarized the research progress of chicken quality regulation from the perspective of feeding pattern,dietary nutrition and slaughter,which could be not only useful for the production of high-quality chicken in commercial poultry industry,but also forward guidance for future studies.
