超高压加工技术能更好地实现品质保留,扎实的研究基础使其具有较大的商业化潜力,但相关法规和标准的缺乏限制了该产业发展,本文探讨我国超高压加工食品合规化需求,旨在通过梳理超高压技术在欧美发达国家的合规化历程,阐述国外从技术争议到技术许可全过程中的经典案例,全面论述超高压技术的可靠性及超高压加工食品的安全性。推动超高压加工技术的合规化将突破该技术目前在我国的产业化瓶颈,为其他非热加工新技术的商业化应用提供参考依据。

High pressure processing technology technology can better achieve retention of quality,and solid research foundation makes it have unlimited commercialization potential,but the deficiency of relevant regulations and standards restrict the development of this industry.The needs to satisfy the imperative technical compliance polices for high pressure processing technology in food processing industry of China were discussed with a view to elaborating the classic cases in the whole process from technical disputes to technical licensing through combing the compliance process of high pressure processing technology in developed countries such as Europe Union and the United States,and comprehensively discussing the reliability and safety of this technology.By pushing forward the establishment of compliant regulations of the high pressure processing technology,the bottlenecks of the industrialization of this technology in China will be broken through so as to provide a reference basis for commercial application of other new non-thermal processing technologies.
