决明子保健饮料的工艺研究

The Development of Cassia Seed Health Drink

本文以决明子浸提液为原料,加入白砂糖、柠檬酸、纯净水等辅料研制一款营养、健康的保健饮料,并通过单因素试验和正交试验确定该保健饮料的最佳配方。结果表明,决明子浸提液与纯净水为6∶10、白砂糖添加量为5%、柠檬酸添加量为0.004%时,决明子保健饮料甜香协调、色泽均匀、具有决明子特有的咖啡香味。

In this paper,a nutritious and healthy health beverage was developed with cassia seed extract as raw material and white granulated sugar,citric acid,purified water and other accessories.The best formula of the health beverage was determined by single factor test and orthogonal test.The results showed that when the ratio of cassia seed extract to purified water was 6∶10,the amount of white granulated sugar was 5%,and the amount of citric acid was 0.004%,the cassia seed health beverage had sweet and harmonious aroma,uniform color and unique coffee flavor of cassia seed.
