摘要
本文以12批次市售散装茶油为研究材料,分别对其酸价、过氧化值、黄曲霉毒素B_(1)和苯并[a]芘4个指标进行测定,分析其食用安全性。结果显示,12批次样品的酸价范围为0.63~5.40 mg·g^(-1),过氧化值范围为0.036~0.660 g/100 g,黄曲霉毒素B_(1)含量为未检出~5.19μg·kg^(-1),苯并[a]芘含量为1.3~29.9μg·kg^(-1)。结果表明,市售散装茶油容易在酸价、过氧化值、苯并[a]芘等项目上出现不合格,存在较大的食品安全风险,需采取有效措施加以控制。
In this paper,12 batches of commercially available camellia oil were used as research materials,and the four indicators of acid value,peroxide value,aflatoxin B_(1) and benzo-a-pyrene were measured respectively,and their food safety was analyzed.The results showed that the acid value of 12 batches of samples was 0.63~5.40 mg·g^(-1),the peroxide value was 0.036~0.660 g/100 g,and the content of aflatoxin B_(1) was not detected~5.19μg·kg^(-1),the content of benzo-apyrene is 1.3~29.9μg·kg^(-1).The results showed that the commercially available bulk camellia oil is prone to be unqualified in terms of acid value,peroxide value,benzo-a-pyrene and other items,and there was a large food safety risk,which needs to be controlled by taking effective measures.
