摘要
十里香机械制曲是以人工制曲的工艺参数为基础,实现了原料进仓、润粮、粉碎、曲块成型的机械化控制。研究机械制曲和人工制曲在培曲过程中对曲房室温、湿度和曲坯温度的影响,对比两者所产成品曲坯的感官和理化指标差异。结果表明,与人工制曲相比机械制曲更加有益于曲坯的成型,且两种方式生产的高温大曲在感官、理化指标方面基本一致。
Shilixiang mechanical starter-making is based on the process parameters of artificial starter-making,Realize the mechanized control of feeding raw material into warehouse,moistening grain,crushing and bending block forming.The effects of artificial starter-making and mechanical starter-making on Daqu culture including their effects on starter room temperature,room humidity,and semi-finished starter temperature were investigated.The difference in the sensory and physiochemical indexes of product starter produced respectively by these two starter-making approaches was analyzed.Compared with artificial starter-making,mechanical starter-making was more helpful for the shape of starter-making and were almost the same as manmade starter on the sensory and physiochemical indexes of high-temperature Daqu。
