苦荞芽菜培养过程中总黄酮和可溶性糖含量变化及抗氧化活性研究 被引量:1

Changes of Content of Total Flavonoids and Soluble Sugar and Antioxidant Activity in Fagopyrum tataricum Sprouts During Cultivation

摘要 本文测定了苦荞发芽时期总黄酮和可溶性糖含量,以及对羟基自由基(·OH)、超氧阴离子自由基(·O_(2)^(-))和过氧化氢(H_(2)O_(2))的清除率。结果表明,苦荞芽菜培养过程中总黄酮和可溶性糖含量及对·OH、·O_(2)^(-)和H_(2)O_(2)的清除率均随培养时间延长不断增加,且均显著高于籽粒。同时,苦荞芽菜总黄酮和可溶性糖含量与对·OH、·O_(2)^(-)和H_(2)O_(2)的清除率均成显著正相关(P<0.01)。 In this paper,the contents of total flavonoids and soluble sugar,and the scavenging rates of hydroxyl radical(·OH),superoxide anion radical(·O_(2)^(-)) and hydrogen peroxide(H_(2)O_(2)) during the germination period of Fagopyrum tataricum were determined.The results showed that the contents of total flavonoids and soluble sugar,and the scavenging rates of·OH,·O_(2)^(-) and H_(2)O_(2) in the cultivation process of Fagopyrum tataricum sprouts increased continuously with the extension of cultivation time,and were significantly higher than those of the grains.At the same time,the contents of total flavonoids and soluble sugar of Fagopyrum tataricum sprouts were significantly positively correlated with the scavenging rates of·OH,·O_(2)^(-)and H_(2)O_(2)(P<0.01).
