不同浓度CO_(2)对青稞气调储藏品质的影响 被引量:1

Effects of Different CO_(2) Concentrations on the Quality of Highland Barley in CA Storage

摘要 针对白青稞储藏过程中易陈化、霉变、品质劣化等问题,以"藏青2000"青稞为试材,研究不同CO_(2)浓度(20%, 50%和80%)处理,于25±0.5℃气调贮藏100 d后,对白青稞储藏品质及理化性质的影响。结果表明,与对照组相比,高浓度CO_(2)气调处理效果有效,且在储藏第100天时, 80%CO_(2)气调处理最佳,青稞整体视觉质量保持较好, L^(*)值低至43.56,水分为6.97%,脂肪酸值为19.13 mg KOH/100 g,过氧化值为1.33 meq/kg,过氧化氢酶活力为58.85 mg H_(2)O_(2)/g,相对电导率为51.8%。试验结果说明高浓度CO_(2)气调贮藏能抑制青稞呼吸作用,调控青稞储藏品质,延缓青稞籽粒劣变,保护青稞新鲜度,利于提高采后青稞耐储性能。 In view of the problems of aging, mildew and quality deterioration of highland barley during storage, “Tibetan blue 2000” highland barley was used as test materials, to study the effects of different CO_(2)concentrations(20%, 50% and 80%)on the storage quality and physicochemical properties of white highland barley after 100 d stored at 25±0.5 ℃ in CAS. The results showed that compared with control group, on the 100 d of CA storage, 80% CO_(2)CA condition was the best treatment.For this group, the overall visual quality of the highland barley was maintained well, the L* value was as low as 43.56, the moisture was 6.97%, the fatty acid value was 19.13 mg KOH/100 g, the peroxide value was 1.33 meq/kg, the catalase activity was 58.85 mg H_(2)O_(2)/g, and the relative conductivity was 51.8%. Therefore, the results indicated that high concentration CO_(2) of CA storage could inhibit the respiration of highland barley, regulate the storage quality of highland barley, delay the grain degradation of highland barley, protect the freshness of highland barley, and improve the storage tolerance of highland barley after harvest.
