壶瓶碎米荠富硒油脂理化特征及体外抗氧化活性的研究 被引量:2

摘要 为研究壶瓶碎米荠种子中富硒油脂的理化特征及体外抗氧化能力,采用索氏提取法提取壶瓶碎米荠种子中富硒油脂,参照国家标准对酸价、过氧化值等指标进行评价,利用HS-SPME-GC-MS和GC-MS法鉴定油脂组成及其油脂挥发性物质,微波消解-原子荧光法测定油脂中硒的含量,福林酚法测定油脂中总酚含量;以该油脂对DPPH、超氧阴离子自由基清除率为评价指标研究该富硒油脂体外抗氧化活性。结果表明,壶瓶碎米荠种子出油率为(31.00±2.85)%,油脂碘值、过氧化值2个指标符合国家标准,酸价高出国家标准0.83 mgKOH/g,硒含量为8.439 mg/kg,达到湖北省地方富硒标准,总酚含量为(1.428±0.032)mg/mL;油脂脂肪酸组成成分主要为不饱和脂肪酸(92.49%),其中含必需脂肪酸亚油酸(25.40%),亚麻酸(2.49%);油脂挥发性成分主要有苯类、烃类、醇类、酯类等56种;清除DPPH、超氧阴离子自由基的IC50分别为:15.749、1.070 mg/mL,且不同浓度范围相关性不同,存在剂量效应。 To study the physicochemical characteristics and in vitro antioxidant capacity of selenium rich oil from Cardamine hupingshanensis seeds.Extraction of selenium rich oil from Cardamine hupingshanensis seeds by Soxhlet extraction were used.The acid value and peroxide value were evaluated according to the national standard.HS-SPME-GC-MS and GC-MS were used to identify the composition of oil and its volatile compounds,determination of selenium in oil by microwave digestion atomic fluorescence spectrometry.The antioxidant activity of the grease was studied in vitro by taking the scavenging rate of DPPH and superoxide anion radical as the evaluation index.The oil yield of Cardamine hupingshanensis seed was(31.00±2.85)%,the iodine value and peroxide value of the oil met the national standard,the acid value was 0.83 mg KOH/g higher than the national standard,and the selenium content was 8.439 mg/kg,reaching the local selenium rich standard of Hubei Province.The total phenol content was(1.428±0.032)mg/mL;the fatty acid composition of oil was mainly unsaturated fatty acid(92.49%),including essential fatty acid linoleic acid(25.40%)and linolenic acid(2.49%).There were 56 kinds of volatile components in oil,such as benzene,hydrocarbons,alcohols and esters,etc.The IC50 of scavenging DPPH and superoxide anion radical were 15.749 mg/mL and 1.070 mg/mL,respectively,different concentration ranges had different correlations,and there was dose effect.
