摘要
目前HACCP体系已经在肉制品行业得到了广泛的应用,肉制品食品安全的水平整体趋势是安全的,积极向上的。但是近两年来外部环境条件发生了重大变化,境外新冠疫情相对比较严重,且未得到有效控制,造成肉制品加工企业的进口原料质量不稳定,存在境外新冠病毒输入的风险。通过对HACCP体系在原料验收、贮存、加工等环节的应用,进行简单的分析和探讨,以供广大同行参考与借鉴。
At present, HACCP system had been widely used in the meat industry, and the overall trend of food safety level of meat products was safe and positive.However, the external environmental conditions had undergone major changes in the past two years, and the overseas novel coronavirus epidemic situation was relatively serious, and it was not been effectively controlled. As a result, the quality of imported raw materials for meat processing enterprises was unstable, and there was a risk of imported novel coronavirus.The application of HACCP system in raw material acceptance, storage, process and other links was simply analyzed and discussed, and it provided the reference for numerous peers.
