食物中常见致癌物质检测方法研究进展

摘要 黄曲霉毒素、苯并芘、甲醛及亚硝酸盐等是食品中常见的致癌物质,具有致突变、致癌性及细胞毒效应,食品原材料、加工方法、添加剂和包装材料等有产生致癌物质的可能,因此致癌物质的检测极其重要。本文就黄曲霉毒素、苯并芘、甲醛、亚硝酸盐及其常见检测方法进行概述,同时分析了每种致癌物质的检测方法的优点及不足,旨在为食品粮油中的常见致癌物质的快速灵敏检测方法提供更有价值的参考,更好地满足检测需求。 Aflatoxin, benzopyrene, formaldehyde, nitrite, etc. are common carcinogens in food, with mutagenic,carcinogenic and cytotoxic effects, food raw materials, processing methods, additives and packaging materials have the possibility of carcinogens, so the detection of carcinogens is extremely important. This paper summarizes aflatoxin,benzopyrene, formaldehyde, nitrite and their common detection methods, and analyzes the advantages and disadvantages of the detection methods of each carcinogen, aiming to provide a more valuable reference for the rapid and sensitive detection methods of common carcinogens in food, grain and oil, which can better meet the detection needs.
