新疆3个品种吊干枣的理化品质及抗氧化能力分析 被引量:1

Analysis of Physic-Chemistry Qualities and Antioxidant Activity of Xinjiang Hanging-Dried Jujube of Three Jujube Cultivars

摘要 吊干枣是近年来出现的一类新型红枣产品。本文选择新疆常见的3个红枣品种的吊干枣为原料,通过对其营养指标、功能活性成分及抗氧化能力分析,以期掌握新疆吊干枣的营养和功能价值。结果表明:不同品种吊干枣的营养和功能成分含量差异显著(p <0.05),其中吊干骏枣的总糖含量最高(69.49%),吊干灰枣的糖酸比(90.88)、总酚(14.11 mg·g^(-1))和总黄酮(6.86 mg·g^(-1))最高;而吊干冬枣的cAMP(365.69 mg·kg^(-1))和cGMP(128.77 mg·kg^(-1))最高。综合来看,新疆吊干枣的总糖含量高(> 60%),糖酸比高(> 60),而粗蛋白、粗脂肪和维生素C含量低,富含cAMP、cGMP、酚酸和黄酮类功能活性成分。此外,吊干处理可能会增强红枣抗氧化能力,说明吊干枣可能会成为一种市场潜力较大的红枣产品。 Hanging-dried jujube is a new type of jujube products in recent years. In this paper, in order to master the nutritional and functional value of Xinjiang hanging-dried jujube, the nutritional indices, functional active components and antioxidant capacity of three jujube cultivars were analyzed. The results showed that there were significant differences in nutrient and functional components contents among three cultivars of hanging-dried jujube(p<0.05), among which the total sugar content of hanging-dried Junzao was the highest(69.49%), and the sugar acid ratio(90.88), total phenols(14.11 mg·g^(-1)) and total flavonoids(6.86 mg·g^(-1)) were the highest in hanging-dried Huizao. However, cAMP(365.69 mg·kg^(-1))and cGMP(128.77 mg·kg^(-1)) of hanging-dried Dongzao were the highest. In all, Xinjiang hanging-dried jujube has high level of total sugar content(>60%), high level of sugar acid ratio(>60), and low level of crude protein, crude fat and vitamin C,and is rich in cAMP and cGMP, phenolic acids and flavonoids function active ingredients. Additional, hanging-dried treatment may enhance antioxidant capacity of jujube fruit, this suggest that the market of hanging-dried jujube may have great potential.
