摘要
我国地大物博,江海湖泊众多,是世界上主要的水产品生产国之一。水产品中营养价值丰富且利于人体消化吸收,在人们的日常饮食中占据重要地位。然而水产品在运输和储存过程中容易受自身或环境中微生物的影响发生腐败,失去食用价值。本文分析了水产品的行业现状,总结了导致水产品发生腐败的主要微生物群及其危害,并提出相应的保鲜方法,为有效延长水产品货架期提供理论依据。
China is one of the major aquatic products producing countries in the world with vast territory and abundant resources. The nutritional value of aquatic products is rich and conducive to human digestion and absorption,which occupies an important position in people’s daily diet. However, in the process of transportation and storage, aquatic products are prone to be corrupted by their own or environmental microorganisms and lose their edible value. In this paper,the present situation of aquatic products industry was analyzed, the main microbial community leading to the corruption of aquatic products spoilage and its harm were summarized, and the corresponding fresh-keeping methods were put forward to provide theoretical basis for effectively extending the shelf life of aquatic products.
