婴幼儿鱼肉泥辅食中无机砷测定方法的研究

摘要 目的:探讨运用液相色谱-电感耦合等离子体质谱法(High Performance Liquid Chromatography Inductively Coupled Plasma Mass Spectrometry,HPLC-ICP-MS)检测婴幼儿鱼肉泥辅食中所含无机砷水平的具体应用效果。方法:用硝酸溶液提取鱼肉泥辅食中的无机砷,随后运用HPLC-ICP-MS对样品中的无机砷含量进行检测,同时利用加标试验考察方法的回收率及精密度。结果:各个砷形态的线性关系及相关系数良好,鱼肉泥中自身所含的无机砷较低,通过加标回收试验,得到测定方法的回收率为82.9%~93.3%,相对标准差在0.6%~2.3%。结论:高效液相色谱-电感耦合等离子体质谱法能够高效准确地检测婴幼儿鱼肉泥辅食中的无机砷,在食品质量检测体系中应用这一检测方法能够有效地对婴幼儿鱼肉泥辅食的质量进行评估。 Objective: The specific application effect of high performance liquid chromatography inductively coupled plasma mass spectrometry(HPLC-ICP-MS) in detecting the level of inorganic arsenic in fish paste supplementary food for infants and young children was explored. Method: Inorganic arsenic in fish paste was extracted with nitric acid solution, and then the content of inorganic arsenic in the sample was detected by HPLC-ICP-MS. At the same time, the recovery and precision of the method were investigated by standard addition experiment. Result: The linear relationship and correlation coefficient of various arsenic forms were good, and the inorganic arsenic contained in fish mud was low. Through the standard addition recovery experiment, the recovery rate of the determination method was 82.9%~93.3%, and the relative standard deviation was 0.6%~2.3%. Conclusion: High performance liquid chromatography inductively coupled plasma mass spectrometry(HPLC-ICP-MS) can efficiently and accurately detect inorganic arsenic in infant fish paste supplementary food. The application of this detection method in food quality detection system can effectively evaluate the quality of infant fish paste supplementary food.
