摘要 食源性致病菌污染是影响乳制品安全的重要因素,如何有效、准确地检测出致病菌的存在对于乳制品的安全控制和品质保证具有重要意义。近红外光谱分析技术因其快速、准确、无损等优点被广泛应用于食品尤其是乳制品的检测中。介绍了近红外分析光谱技术的原理和特点,列举了乳制品中常见的致病菌种类,并探讨了该技术在乳源致病菌快速检测中的研究现状,为近红外光谱技术在致病菌检测中的应用研究提供一定的参考依据。 The contamination of food-borne pathogenic bacteria is an important factor affecting the safety of dairy products.How to effectively and accurately detect the existence of pathogenic bacteria is of great significance for the safety control and quality assurance of dairy products.Near-infrared spectroscopy(NIR)analysis technology is widely used in the detection of food,especially dairy products,due to its rapid,accurate,and non-destructive advantages.This paper mainly introduced the principle and characteristics of NIR analysis technology,listed the common pathogenic bacteria in dairy products,and discussed the research status of this technology in the rapid detection of milk-derived pathogenic bacteria,to provide certain reference for the application of NIR technology in the detection of pathogenic bacteria.
