我国不同产区羊肉中碳、氮同位素比值特征及溯源研究 被引量:4

Characteristics and traceability research on carbon and nitrogen stable isotope ratios of mutton from different producing regions of China

摘要 目的研究我国不同产区间羊肉组织中C、N稳定同位素比值(δ^(13) C和δ^(15) N)的差异及规律。方法采集我国4个代表性产区的羊肉,分离提取其肉粉、脂肪、脱脂肉粉3种组织部位,采用元素分析仪-稳定同位素比值质谱法(element analyzer-isotope ratio mass spectrometry,EA-IRMS)对其δ^(13) C和δ^(15) N进行检测。结合多种统计学方法对结果进行统计。结果我国多个产区出产羊肉的δ^(13) C和δ^(15) N存在显著差异。采用主成分分析法可以将各产地的产品大致区分开;通过聚类分析可以把产品按农区产地与牧区产地区分开,但各产地产品无法独立区分开;采用判别分析,农区产地与牧区产地的整体交叉检验正确率为84.0%。结论研究表明δ^(13) C和δ^(15) N可以作为羊肉产地的溯源指标。初步建立了国内4个羊肉产地的溯源模型,为国产羊肉产地溯源研究提供了依据。 Objective To study the difference and law of C and N stable isotope ratio(δ^(13) C andδ^(15) N)in mutton tissue from different producing areas in China.Methods Mutton from 4 representative production areas in China was collected,3 kinds of tissue parts of meat powder,fat and defatted meat powder were separated and extracted,and the element analyzer-isotope ratio mass spectrometry(EA-IRMS)was used to detectδ^(13) C andδ^(15) N.The results were counted by combining a variety of statistical methods.Results There were significant differences inδ^(13) C andδ^(15) N value of lamb in different producing regions.Principal component analysis could be used to roughly distinguish the products of various producing areas;through cluster analysis,the products could be separated according to the producing areas of agricultural areas and pastoral areas,but the products of each producing area could not be separated independently;using discriminant analysis,the overall cross test accuracy of agricultural and pastoral areas was 84.0%.Conclusion This research shows thatδ^(13) C andδ^(15) N can be used as the traceability indexes of mutton origin.The traceability models of 4 mutton producing areas in China are preliminarily established,so as to provide a basis for the traceability research of domestic mutton producing areas.
