摘要
食源性疾病的暴发促使研究人员寻找更快捷有效的方法来监控食品中的微生物。预测微生物模型通过定量内在因素和外在因素对食品中微生物行为的影响,从而进行食品风险管理和产品研发。核心参数模型是其中的一种二级模型,适用于多种环境因素共同作用下微生物生长情况的预测。近年来,随着其不断被完善,已经发展成为研究微生物的重要工具。本文首先介绍了核心参数模型的概念以及现阶段国内外使用最广泛的核心参数模型。然后介绍了近年来核心参数模型的扩展和优化情况以及其在食品安全领域的应用,最后对未来的研究方向进行了展望。
Outbreaks of foodborne diseases prompted researchers to look for faster and more effective ways to monitor microorganisms in food.Predictive microbial models quantify the impact of intrinsic and extrinsic factors on microbial behavior in food for food risk management and product development.The cardinal parameters model is one of the secondary models,which is suitable for the determination of microbial growth under the combined action of various environmental factors.As cardinal parameters model has been refined in recent years,it has developed into an important tool for the study of microorganisms.Firstly,this article introduces the concept of the cardinal parameters model and the most widely used cardinal parameters models at this stage.Then it introduces the extension and optimization of cardinal parameters models and their application in food safety in recent years,and finally gives an outlook on future research directions.
