壳聚糖-植酸复合膜性能分析及其对鲈鱼片保鲜效果研究 被引量:2

摘要 以壳聚糖为成膜剂,植酸为抗氧化剂制备安全可降解复合膜。以复合膜厚度、水溶性、不透明度、水蒸气透过系数、机械强度为指标,确定植酸添加量并分析复合膜的DPPH自由基清除能力。以4℃储藏的鲈鱼片为研究对象,探讨该复合膜对其保鲜效果。结果表明:当植酸添加量为0.06 g/100 mL时,复合膜的成膜效果最好,其对DPPH自由基的清除率可达94%,该复合膜可以降低鲈鱼片pH、TVB-N值、汁液流失率的上升速度,能有效保持鲈鱼片的品质,延长保鲜时间。 Using chitosan as film-forming agent and phytic acid as antioxidant,a safe and degradable composite membrane was prepared.The thickness,water solubility,opacity,water vapor permeability and mechanical strength of the composite membrane were used as indexes to determine the adding amount of phytic acid and analyze the DPPH radical scavenging ability of the composite membrane.The fresh-keeping effect of the composite membrane on perch slices stored at 4℃was studied.The results showed that when the adding amount of phytic acid was 0.06 g/100 mL,the film-forming effect of the composite membrane was the best,and its scavenging rate of DPPH free radical could reach 94%.The composite membrane could reduce the rising speed of pH,TVB-N value and juice loss rate of perch slices,effectively maintain the quality of perch slices and extend the preservation time.
