摘要
为了测定长荡湖野生及养殖鳙(Aristichthys nobilis)肌肉的营养成分,并对其营养价值进行比较及系统评价。采用国家标准生化测定方法分别检测了野生及养殖各15条鳙肌肉样本中水分、蛋白质、灰分、氨基酸和脂肪酸的含量。结果显示:长荡湖野生鳙肌肉的水分含量为75.92%、蛋白质含量为13.47%、灰分含量为1.08%。氨基酸检测中共测出17种水解氨基酸,总量(TAA)为18.67%,谷氨酸含量最高,半胱氨酸含量最低。其中,4种鲜味氨基酸(DAA)占氨基酸总量的38.26%;7种必需氨基酸(EAA)和8种非必需氨基酸(NEAA)分别占氨基酸总量的39.67%和51.06%,EAAI值为103.22,符合优质蛋白源的标准。脂肪酸检测中共测出饱和脂肪酸(SFA)5种、单不饱和脂肪酸(MUFA)4种和多不饱和脂肪酸(PUFA)8种。PUFA/SFA比例为1.3,EPA含量野生鳙明显多于养殖鳙。指出,长荡湖野生鳙可作为优质蛋白来源,具有较高的营养价值。
In order to determine the nutritional components of the muscles of Aristichthys nobilis(bighead carp) in Changdang Lake and to evaluate its nutritional value, the contents of moisture, protein, ash, amino acids and fatty acids in 30 muscle samples of bighead carp were determined by national standard biochemical determination method. The results showed that the moisture content, protein content and ash content of wild bighead carp in Changdang Lake were 75.92%, 13.47% and 1.08%, respectively. A total of 17 kinds of amino acids were detected. The content of glutamate was the highest and the content of cysteine was the lowest. The total amount(TAA) was 18.67 g/100 g. Among them, four elicious amino acids(DAA) accounted for 38.26% of the total amino acids;7 essential amino acids(EAA) and 8 non-essential amino acids(NEAA) accounted for 39.67% and 51.06%of the total amino acids, respectively. The EAAI value was 103.22, which met the standard of high-quality protein source. Five kinds of saturated fatty acids(SFA), four kinds of monounsaturated fatty acids(MUFA) and eight kinds of polyunsaturated fatty acids(PUFA) were detected. The ratio of PUFA/SFA was 1.3, and the eicosapentaenoic acid(EPA) content of wild bighead carp was significantly higher than that of cultured bighead carp. These results suggested that wild bighead carp in Changdang Lake possessed high nutritional value, and it could be treated as a high-quality protein source.
