可溶性膳食纤维的制备及其在畜牧生产中的应用研究进展

Recent Progress on Preparation of Soluble Dietary Fiber and Its Application in Animal Production

可溶性膳食纤维是一类易溶于水却无法被人类和动物胃肠道直接利用的碳水化合物,但是其对机体健康发挥着重要调节作用。可溶性膳食纤维基于其水合作用和持油性等理化特性、抗氧化性、糖脂代谢和肠道微生态平衡等生物学功能而在人类医学、食品以及畜禽饲料领域具有很高的开发和应用价值。本文就可溶性膳食纤维定义、理化特性、制备工艺、生物学功能及其在畜牧生产中的应用进行综述,以期为后续对可溶性膳食纤维的开发和应用提供参考。

Soluble dietary fiber is a kind of carbohydrate which is easily soluble in water while can’t be directly used by human and animal gastrointestinal tract, it plays an important role in regulating body health. Soluble dietary fiber has high development and application value in the fields of human medicine, food, livestock and poultry feed due to its physical and chemical properties such as hydration, oil retention, antioxidant activity, glucose and lipid metabolism and intestinal microecological balance. In this review, the definition, physicochemical properties, preparation technology, biological function and application of soluble dietary fiber in animal production are reviewed, which may provide reference for the development and application of soluble dietary fiber in the subsequent work.
