食用酵素的降血脂作用研究进展

摘要 食用酵素是指利用新鲜的蔬果、谷物、药食同源中药和食用菌等天然食材,经压榨、浓缩、萃取等步骤提取所需成分,再通过发酵制成的可供人类食用的混合发酵液。近年来,大量实验证实食用酵素有明显的减肥降脂功效,同时能改善高脂血症及其引发的一系列并发症,受到消费者广泛关注。本文简述了谷类酵素、果蔬酵素、药食同源酵素的营养价值,并对具有降血脂功效的酵素种类及酵素中降血脂的活性成分进行归纳总结,以帮助人们正确认识并合理利用酵素产品,为相关降血脂酵素产品的高效开发和工业化应用提供科学参考依据,推动降血脂酵素产业发展。 In recent years,the health care function and preventive effect of edible enzymes on some chronic diseases have attracted the attention of consumers.It is widely proven that edible enzymes have obvious effects on reducing body weight and lipid,and can improve hyperlipidemia and its series of complications.This paper briefly describes the nutritional value of cereal enzymes,fruit and vegetable enzymes and drug and food homologous enzymes,and summarizes the types of enzymes with hypolipidemic effect and the hypolipidemic components in enzymes,which will help to correctly understand and rationally use enzyme products,and provide scientific reference for the efficient development and industrial application of relevant hypolipidemic enzyme products,and promote the development of hypolipidemic enzyme industry.
