摘要
芫根中含有多种活性物质,具有抗缺氧、抗氧化、抗疲劳等功效。以芫根为原料,对芫根水提液的抗疲劳活性进行了研究。抗疲劳活性动物实验表明:灌胃芫根水提液组与空白组小鼠相比小鼠负重力竭游泳时间明显增加,延长转棒上的运动时间,血清尿素和血乳酸含量均下降,而肝糖原和肌糖原含量明显增加;同时进行了体内抗氧化能力测定,芫根组小鼠血清中CAT活力升高,MDA含量降低。芫根水提液具有良好的抗氧化性和抗疲劳性。经过调配后,芫根饮料色泽均一明亮,酸甜适中,风味易接受,无苦涩感,香气柔和,组织状态均一,无分层和浑浊现象,感官评价明显提升,并通过了理化指标与微生物指标的检测,饮料检测指标均符合食品安全国家标准,为芫根饮料的开发利用提供了理论依据。
Brassica rapa L.contains a variety of active substances,which has the anti-hypoxia,anti-oxidation,antifatigue and other effects.In this study,the anti-fatigue activity of water extract from Brassica rapa L.was studied.The results showed that the swimming time of the mice in the water extract group was significantly increased compared with the control group,the exercise time of the fatigue rod was normal,the content of urea and blood lactate decreased,while the content of glycogen and muscle glycogen in live rincreased significantly;The activity of CAT was increased and MDA content was decreased in Brassica rapa L.group.The water extract of Brassica rapa L.has good antioxidant and anti-fatigue properties.After blending,Brassica rapa L.beverage has the same color,moderate acidity and sweet,easy to accept flavor,no bitter and astringent feeling,soft fragrance,uniform organization state,no stratification and turbidity.Sensory evaluation has been improved obviously,which provides theoretical basis for the development and utilization of Brassica rapa L.beverage.
