萧县葡萄皮中可溶性膳食纤维的提取及其抗氧化性研究 被引量:3

Extraction and Antioxidant Activity of Soluble Dietary Fiber from Grape Skin in Xiaoxian

摘要 为提高葡萄皮的利用率,以萧县葡萄皮为原料,测定其中果胶、纤维素、半纤维素、木质素的含量.利用酶法提取可溶性膳食纤维(SDF),对可溶性膳食纤维进行紫外光谱和红外光谱扫描、理化性质(持水性、持油性)和抗氧化能力(还原能力、ABTS+清除能力)测定.结果表明葡萄皮中木质素含量>果胶含量>纤维素含量>半纤维素含量,葡萄皮中可溶性膳食纤维含量为230.4±28.0 mg/g,紫外和红外光谱扫描证明可溶性膳食纤维中含有大量糖类物质,并测得可溶性膳食纤维持水力为1.25 g/g,持油力为0.67 g/g.在抗氧化性方面也表现出较好的能力,ABTS+清除自由基能力最高达到77.5%,具有还原铁氰化钾的能力.由此可见葡萄皮中含有大量的可溶性膳食纤维,其应用前景广阔. In order to improve the utilization rate of Xiaoxian grape skin,the contents of pectin,cellulose,hemicellulose and lignin in Xiaoxian grape skin were determined.The soluble dietary fiber was extracted by enzymatic method.The soluble dietary fiber was scanned by UV and IR spectra.The physicochemical properties(water holding capacity and oil holding capacity)and antioxidant capacity(reducing capacity and ABTS+scavenging capacity)were determined.The results showed that lignin content>pectin content>cellulose content>hemicellulose content in grape skin.The content of soluble dietary fiber in grape skin was 230.4±28.0 mg/g.UV and infrared spectroscopy scanning proved that soluble dietary fiber contained a large number of carbohydrates.The water holding capacity and oil holding capacity of soluble dietary fiber were 1.25 g/g and 0.67 g/g respectively.It also showed good antioxidant capacity,ABTS+scavenging free radical ability up to 77.5%,with potassium ferricyanide reduction ability.It can be seen that grape skin contains a large number of soluble dietary fiber,which has broad application prospects.
