陶瓷膜对浓香型白酒过滤效果研究 被引量:2

摘要 采用一定孔径的陶瓷膜,对不同度数的浓香型白酒进行过滤,对过滤前后低度酒样的理化指标、感官质量、澄清度与存放稳定性等方面进行对比。实验结果发现陶瓷膜能够很好地去除低度白酒中的浑浊物,理化指标以及口感与过滤前酒样差别不大,并且过滤后的酒样在0℃冰箱中放置120 h后无沉淀和浑浊物析出,室温下长期存放稳定性也较好。陶瓷膜与硅藻土过滤后高度酒样的理化指标、感官质量、澄清度与存放稳定性等数据差别不大,说明陶瓷膜过滤与硅藻土过滤效果差别不大。 Ceramic membrane was used to filtrate Nongxiang Baijiu with different alcohol content. The physicochemical indexes, sensory quality, clarity and storage stability of low-alcohol Baijiu before and after filtration were compared. The experimental results showed that ceramic membrane could significantly reduce the turbidity of low-alcohol Baijiu while maintain its physicochemical indexes and taste. Moreover, the filtered Baijiu sample showed no sediment or turbidity after being placed in the 0 ℃ refrigerator for120 h, and its long-term storage stability at room temperature was good. There was little difference in the physicochemical indexes,sensory quality, clarity and storage stability of high-alcohol Baijiu between ceramic membrane filtration and diatomite filtration, indicating that the filtration effect of ceramic membrane was close to that of diatomite.
