欧洲肉鸽Ⅱ系与塔里木鸽生产特性及营养成分的比较 被引量:4

摘要 为了更好地了解欧洲肉鸽Ⅱ系和塔里木鸽的生产特性,对2个纯系的屠宰性能、器官指数、肌肉纤维和胸肌中的营养成分进行了测定和比较分析。结果表明:欧洲肉鸽Ⅱ系的屠宰率、全净膛率、半净膛率极显著高于塔里木鸽,腿肌率显著高于塔里木鸽,但胸肌率显著低于塔里木鸽。欧洲肉鸽Ⅱ系的心脏指数和肠的指数极显著低于塔里木鸽。两个品种(系)间腿肌和胸肌的肌纤维直径和密度均无显著差异。在营养成分方面,欧洲肉鸽Ⅱ系胸肌中的肌苷酸含量显著高于塔里木鸽,钠和锌的含量显著低于塔里木鸽。欧洲肉鸽Ⅱ系胸肌中的甘氨酸含量显著高于塔里木鸽。欧洲肉鸽Ⅱ系胸肌中的饱和脂肪酸比例显著低于塔里木鸽,油酸含量极显著高于塔里木鸽,肉豆蔻烯酸、棕榈油酸和肉豆蔻酸含量显著高于塔里木鸽。研究结果可为进一步开发利用该品种(系)资源和新品种培育提供科学依据。 In order to better understand the production characteristics of European meat pigeon line Ⅱ and Tarim pigeon,the slaughter performance,organ index,muscle fiber and nutritional components in chest muscle of the two varieties(lines) were measured and compared. The results showed that the slaughter rate,eviscerated carcass weight rate and semi-eviscerated carcass weight rate of European meat pigeon line Ⅱ were extremely significantly higher than those of Tarim pigeon,the leg muscle rate was significantly higher than that of Tarim pigeon,but the chest muscle rate was significantly lower than that of Tarim pigeon. The heart index and intestines index of European meat pigeon line Ⅱ were extremely significantly lower than those of Tarim pigeon. There was no significant difference in muscle fiber diameter and density of leg muscle and chest muscle between the two varieties(lines). In terms of nutrients,the inosine acid content in the chest muscle of European meat pigeon line Ⅱ was significantly higher than that of Tarim pigeon,and sodium content and zinc content were significantly lower than those of Tarim pigeon. The glycine content in the chest muscle of European meat pigeon line Ⅱ was significantly higher than that of Tarim pigeon. The proportion of saturated fatty acids in the chest muscle of European meat pigeon line Ⅱ was significantly lower than that of Tarim pigeon, the oleic acid content was significantly higher than that of Tarim pigeon,and the myristic acid content,palmitoleic acid content and myristic acid content were significantly higher than those of Tarim pigeon. The results could provide a scientific basis for the further development and utilization of the variety(line) resources and the cultivation of new varieties.
