江西省市售水生蔬菜中微量元素含量调查及健康风险评估

摘要 2018年监测了江西省11个设区市市售4种水生蔬菜中Se、Mn、Cu、Ni、V、As和Hg 7种微量元素含量,了解江西省市售水生蔬菜样品中微量元素含量,评价As和Hg含量对不同年龄人群的健康风险。结果表明4种水生蔬菜样品中:芋中硒和镍含量最高;藕中铜和锰含量最高;蕹菜中钒含量最高。所有水生蔬菜样品的As和Hg含量均未超标,符合国家标准。不同年龄人群通过食用水生蔬菜摄入As和Hg的健康风险较低,不会危害健康。 In 2018,the contents of 7 kinds of trace elements of Se,Mn,Cu,Ni,V,As and Hg in four aquatic vegetables sold in 11 cities of Jiangxi Province were monitored,to understand the content of trace elements in aquatic vegetables sold in Jiangxi Province,to evaluate the health risks of As and Hg contents to different age groups.The results showed that among the four aquatic vegetable samples,The contents of selenium and nickel in taro were the highest;The contents of copper and manganese in lotus root were the highest;The vanadium content in water spinach is the highest.The contents of As and Hg in all aquatic vegetable samples did not exceed the standard,met the national food safety standard.The health risk of As and Hg ingested by people of different ages through eating aquatic vegetables is low,it does not harm health.
