摘要
硒(Selenium,Se)是人体所必需的微量元素,具有其他元素不可替代的重要功效,与人体健康有紧密的联系。纳米硒则因其毒性低、吸收率高、生物活性高的优点,目前在动物生产、生物医药、植物营养等方面均已得到应用。随着纳米硒的应用越来越广泛,也逐渐开始用于食品包装材料的研究。多糖类物质具有许多羟基(.OH),可以与纳米硒通过氢键作用结合,阻碍纳米硒的凝集,减少纳米硒粒子间的相互作用,提高其生物活性。此外,多糖具有的多种功能性基团和多支化学结构,对纳米硒粒子的制备、稳定及其功能特性均具有调节作用。文章针对纳米硒的合成、多糖-纳米硒的制备及其在食品包装材料的研究进展进行了分析探讨。
Selenium(Se) is an essential trace element for human body.It plays an important role that can not be replaced by other elements and it is closely related to human health.Selenium nanoparticles has been applied in animal production,biomedicines and plant nutrition due to its advantages of low toxicity,high absorption rate and high biological activity.With the more and more extensive application of selenium nanoparticles,it has gradually begun to be used in the research of food packaging materials.The polysaccharide has many hydroxyl groups(.OH),which can be bonded with selenium nanoparticles by hydrogen bonding,thus preventing the aggregation between selenium nanoparticles,reducing the interaction between them,and improving its biological activity.In addition,polysaccharides also have a variety of functional groups and multi-branching chemical structures,which regulates the formation,stability of selenium nanoparticles and functional characteristics.In this paper,the synthesis of nanoselenium,the preparation of polysaccharide-selenium nanoparticles and its research progress in food packaging materials were analyzed and discussed.
