纳米硒强化食品的开发与抗肿瘤生物效应研究进展 被引量:2

摘要 硒是人体必需的功能性元素之一,人体吸收的硒有无机硒和有机硒。纳米尺寸的硒单质(Seleniumn nanoparticles,Se NPs)具有吸收性好、安全性高、生物活性高等特点,在食品、医药领域具有广泛的应用前景。Se NPs的形貌可以通过改变调控剂(如多糖、蛋白质或其他高分子物质)来实现。纳米硒不仅自身具有抗肿瘤作用,还能协同其他活性成分一起发挥抗肿瘤效果。文章总结了纳米硒的特性以及合成方法,并对纳米硒作为营养强化剂开发纳米硒强化食品的未来进行了分析与展望,为纳米硒强化功能性食品的开发提供了理论依据以及新思路。 Selenium is one of the essential functional elements in human body.The main selenium absorbed by human body is inorganic and organic selenium.Seleniumn nanoparticles(SeNPs) have the characteristics of good absorption,high safety and high biological activity,and have a wide application prospect in the field of food and medicine.The morphologies of SeNPs can be achieved by changing regulators such as polysaccharides,proteins or other macromolecules.SeNPs not only has antitumor effect by itself,but also can cooperate with other active ingredients to exert anti-tumor effect.In this paper,the characteristics and synthesis methods of SeNPs were summarized,and the future development of SeNPs-fortified food as a nutritional enhancer was analyzed and prospected,which provided theoretical basis and new ideas for the development of SeNPs-fortified functional food.
