摘要
十字花科作物是人们日常生活中经常食用的蔬菜,它们普遍具有较强的富硒能力,可以转化和利用硒,是膳食补硒的理想载体。不同的十字花科作物体内的硒代氨基酸有所差异,包括硒代半胱氨酸、硒代蛋氨酸等。硒对十字花科作物的芥子油苷含量会产生影响,同时可以合成一些硒代芥子油苷物质,对于十字花科作物营养品质形成具有重要意义。另外,硒对氨基酸、黄酮、酚酸等十字花科作物的重要品质指标也会产生影响。文章概述了近年来硒与十字花科作物品质的相关研究,可为十字花科作物的富硒栽培提供一定的理论基础。
Cruciferous crops are prevalent vegetables in the daily lives of people.They are excellent carriers for dietary Se supplementation because they have high selenium(Se) enrichment capacity and can transform and utilize Se.Various selenoamino acids,such as selenocysteine and selenomethionine,are found in different cruciferous vegetables.Se can alter glucosinolate content in cruciferous crops,and certain seleno-glucosinolates can be generated,which is important for the development of nutritional quality in cruciferous crops.Se can also affect other critical quality indicators in cruciferous crops,such as amino acids,flavonoids,and phenolic acids.This study highlights the recent researches on Se and the nutrient quality in cruciferous crops,which can serve as a theoretical foundation for Se-rich farming of cruciferous crops.
