摘要
红棕榈油含有几乎等量的饱和和不饱和脂肪酸,符合通过温和加工提取的精炼油的质量规格,除了可以缓解VA缺乏症外,该油富含VE以及植物营养素,对身体健康有潜在功效。文章综述了红棕榈油的理化性质、提取工艺、营养特性以及对健康的积极影响,旨在为红棕榈油的提取、加工以及应用方面提供理论依据。
Red palm oil contains almost the same amount of saturated and unsaturated fatty acids,which meets the quality specifications of refined oil extracted through mild processing.In addition to alleviating V;deficiency,the oil is rich in V;and phytonutrients,and has potential effects in promoting various health.This paper summarizes the physical and chemical properties,extraction technology,nutritional characteristics and positive effects on health of red palm oil,in order to provide a theoretical basis for the extraction,processing and application of red palm oil.
