食用燕窝产品质量安全风险分析以及监管建议

Quality and Safety Risk Analysis of Edible Bird’s Nest Products and Supervision Suggestions

我国是世界上最大的燕窝消费国,全球80%以上的燕窝均由我国消费。2011年在食用燕窝产品中检测到高含量的亚硝酸盐,以及2020年的“辛巴燕窝事件”均引发了消费者对燕窝产品质量的广泛关注。燕窝产品供应链上每个环节都有可能产生安全风险,消除或降低风险至可接受的程度是食品安全管理的目标。目前燕窝产品主要分为进口后直接销售和进口后加工再销售两类。本研究对燕窝中主要污染物的来源、含量情况、相应的控制措施以及燕窝真伪鉴别方面的内容进行了分析,并提出了相应的监管建议,为燕窝加工企业和监管部门准确把握燕窝产品安全风险变化态势以及对燕窝质量有效监管提供参考,从而保障消费者权益,实现燕窝产品的安全。

China is the largest bird’s nest consumer in the world,and more than 80%of the bird’s nest in the world is consumed by Chinese.The detection of high content of nitrite in edible bird’s nest products in 2011 and the“Simba bird’s nest incident”in 2020 have aroused consumers’extensive attention to the quality of bird’s nest products.Every link in the supply chain of bird’s nest products may have safety risks.The goal of food safety management is to eliminate or reduce the risks to an acceptable level.At present,bird’s nest products are mainly divided into direct sales after import and processing and resale after import.This study analyzes the source and content of main pollutants in bird’s nest,corresponding control measures and the identification of authenticity of bird’s nest,and puts forward corresponding supervision suggestions,so as to provide reference for bird’s nest processing enterprises and regulatory authorities to accurately grasp the change trend of safety risk of bird’s nest products,so as to protect consumers’rights and interests and realize the safety of bird’s nest products.
