国内植物肉产品市场现状及上海高校大学生购买影响因素分析

摘要 为了解目前国内植物肉产品的主要形式和消费现状,深入了解大学生对植物肉的认知程度及状况,掌握大学生对植物肉产品的消费现状和认识态度,本研究采用自行设计的问卷对197名上海海洋大学在校大学生进行调查,收集大学生对植物肉了解程度。调查结果表明,目前植物肉产品以大豆蛋白为原料为主,价格与动物肉持平乃至更高;上海海洋大学在校大学生对植物肉的了解程度与受调查学生性别无显著差异(P>0.05),与调查学生专业以及月生活费水平存在显著差异(P<0.01)。该校大学生普遍通过短视频等网络方式认识植物肉新产品,对植物肉产品抱有新奇的态度。目前大学生对于植物肉了解程度较低,相关企业部门可以持续借助网络等进行产品推广,同时也应加大研发力度,并将价格控制在与动物肉持平或略低于动物肉。 In order to learn the main forms and consumption status of plant meat products in China,deeply understand the cognitive level and consumption attitude of plant meat products among college students,in this study,197 college students in Shanghai Ocean University were investigated with a self-designed questionnaire to collect the understanding of college students on plant meat.The results showed that current plant-based meat was mainly made from soybean protein and other ingredients,and its price was equally,even higher to true meat.There was no significant difference between the respondents’understanding of plant-based meat and their gender(P>0.05),but it showed significant differences between the student’major and their monthly living expenses(P<0.01).The college students generally found information about plant-based meat through internet,such as short videos,and kept a novel attitude towards the kind of product,but college students now know little about them.The results demonstrated that related food companies should continue to use internet to promote their products.Meanwhile,they should take further steps in the development of plant-based meat,and make sure the price of their product is equal to meat,or slightly lower.The research provides the reference for the development and consumption demand of plant meat products in China.
