烟台地区葡萄酒中杂醇油的检测研究

Study on the Detection of Fusel Oil in Wine in Yantai Area

山东烟台是我国唯一的国际葡萄酒城,也是酿酒葡萄的黄金产区。葡萄酒质量安全不仅影响我国葡萄酒产业的健康发展,同时也危及消费者健康。本实验优化了GB/T 5009.48—2003中的前处理方法和色谱条件,继而测定了本地市场35种葡萄酒及自酿果酒样品中的杂醇油含量,结果在0.0025~0.0910 g/100 mL范围内,相对标准偏差为1.5%~2.8%,加标回收率为99.8%~103.3%。本方法较显著提高了国标法的杂醇油分离度,并将检测时间缩短至20 min/组,在一定范围内建立了烟台市售的葡萄酒中杂醇油指纹图谱,实验结果对实现本地葡萄酒的快速鉴定有一定的参考价值。

Yantai is China’s only international wine city,is also the wine grape gold production area.Wine quality and safety not only affect the healthy development of China’s wine industry,but also endanger the health of consumers.The pretreatment method and chromatographic conditions of GB/T 5009.48—2003 were optimized,and the Fusel oil content in 35 kinds of wine and self-made wine samples from local market were determined,results in the range of 0.0025~0.0910 g/100 mL,the RSD was 1.5%~2.8%,and the recoveries were 99.8%~103.3%.The method improved the separation of Fusel oil in the national standard method,shortened the detection time to 20 min/group,and established the database of fusel oil fingerprint in wine sold in Yantai,the results of the experiment have certain reference value for the rapid identification of local wine.
