野生黄花菜花蕾营养与功能成分分析

Analysis of Nutrition and Functional Substance in Flower Buds of Wild Daylily

对野生黄花菜花蕾主要营养和功能成分含量进行测定分析,为开发利用野生黄花菜资源提供营养理论基础及参考依据。以2种野生黄花菜(‘WT1’和‘WT2’)为材料,采用常规测定方法,对花蕾中多个品质指标进行定量比较分析。结果表明:野生黄花菜‘WT2’花蕾中脂肪、可溶性糖、可溶性蛋白、维生素C及β-胡萝卜素的含量显著高于‘WT1’,而粗纤维和维生素E的含量,两者无明显差异;除Na和Cu外,其余6种人体必需的矿物元素在‘WT2'花蕾中的含量显著高于‘WT1’。‘WT2’花蕾中含有16种氨基酸,包括7种人体必需氨基酸,其所含的人体必需氨基酸达到8.58 mg/g,‘WT2’花蕾中多酚和黄酮的含量显著高于‘WT1’。因此,野生黄花菜‘WT2'是一种营养价值较高的食用花卉。

The contents of main nutrients and functional component in buds of flowers were determined and analyzed in this study,which is expected to provide theoretical basis and reference for the development and utilization of wild daylily.With two types of wild daylily(‘WT1’and‘WT2’)as materials,conventional testing methods were used to quantitatively compare and analyze the several quality indexes in buds of flowers.The results showed that the contents of fat,soluble sugar,soluble protein,vitamin C and carotene in the buds of‘WT2’were significantly higher than those in‘WT1’,while the contents of crude fiber and vitamin E had no significant difference between them.Except for Na and Cu,the contents of other six essential mineral elements in‘WT2’were significantly higher than those in‘WT1’.There were 16 types of amino acid in‘WT2’,including 7 kinds of essential amino acid.The content of essential amino acids was up to 8.58 mg/g.The contents of polyphenols and flavonoids in‘WT2’were significantly higher than those of‘WT1’.Therefore,‘WT2’can be a high nutritional edible flower.
