摘要
白玉汾酒是以汾酒为基酒,配以肉桂、糖源等,用特定的加工工艺配制生产而成。白玉汾酒有自身独特的加工工艺,出厂需通过特定的产品质量标准检测,本文对白玉汾酒生产工艺过程中原料——基酒、糖源、药材、母液生产等进行详细的分析阐述,对酒体成型设计、配制工艺等进行介绍,最后就出厂前产品的感官标准及理化指标进行简述。
Baiyu Fenjiu is a kind of liqueur produced with Fenjiu liquor,cinnamon,sugar source,etc.It is produced by a specific pro-cessing technology,and has specific quality standards.This paper briefly describes the key factors of the production process of Baiyu Fenjiu,including base liquor,sugar source,medicinal materials,liquid starter,etc.Then the liquor body design and the blending tech-nology are introduced.Finally the sensory and physicochemical standards of the product are expounded.
