三种蜜源蜂蜜品质比较分析

摘要 为研究不同花源蜂蜜营养成分的差异,本文以槐花、荆条花、枣花三种蜂蜜为研究对象,通过液相色谱分离分析等技术手段,系统比较了三种蜂蜜的淀粉酶活性及氨基酸种类、含量的差异。结果显示,三种蜂蜜在1%淀粉溶液中的活性没有显著性差异(P>0.05),平均为21.8 mL/(g·h);荆条花蜂蜜、枣花蜂蜜的总氨基酸含量(g/100g)分别为0.17和0.26,显著高于槐花蜜的0.076(P=0.0094;P=0.0024),但三种蜂蜜的16种氨基酸含量均没有显著差异(P>0.05)。本研究为消费者选用不同种类蜂蜜提供参考依据,也为进一步深入研究蜂蜜中营养成分的种类和作用提供数据支持。 In order to study the differences in the nutritional components of honey from different nectar sources.In this paper,honey from three sources of Sophora japonica,Vitex flower and Jujube flower was used as the research object,and the amylase activity and amino acid differences of the three honeys were compared by liquid chromatography separation and analysis techniques.The results showed that there was no signifi cant difference in the activity of the three honeys in 1%starch solution(P>0.05),with an average of 21.8 mL/(g·h);The total amino acid contents of Vitex fl ower honey and Jujube fl ower honey were 0.17g/100g and 0.26g/100g,respectively,which were signifi cantly higher than that of Sophora japonica honey(0.076g/100g)(P=0.0094,P=0.0024),but there was no signifi cant difference in single amino acid(P>0.05).This study provides a reference for consumers to choose different types of honey,and provides data support for further research on the types and functions of nutrients in honey.
