咖啡豆化学成分发现及药用价值研究现状 被引量:3

摘要 咖啡是深受人们喜爱的膳食补充剂,风味独特,畅销全球。咖啡豆含有复杂的化学成分且具有广泛的生物活性,生物碱、糖类、有机酸、酯类、甾醇和二萜等化学成分的研究取得了明显进展。咖啡具有较高的药用价值,在神经保护、防御高血糖和高血脂、抗癌、抗炎、抗氧化、保肝等方面潜力较大。本文综述了咖啡豆的化学成分及发现方法、主要活性物质的生物合成和潜在药用价值,为咖啡豆的深入研究和产业开发提供参考。 Coffee is a popular dietary supplement with a unique flavor in the world.Coffee beans contain complex chemical components and extensive biological activities.The research on chemical components of coffee beans such as alkaloids,sugars,organic acids,esters,sterols and diterpenes had made significant progress.The effects of neuroprotection,defense against hyperglycemia and hyperlipidemia,anticancer,anti-inflammatory,anti-oxidation,and liver protection were found in coffee beans.This article revieweds the chemical components and discoveries methods in coffee beans,the biosynthesis of the main active substances and their potential medicinal value,and provides references for in-depth research and industrial development of coffee beans.
