摘要
食源性微生物的污染是餐饮服务环节食品安全风险的重要来源之一。本文主要介绍了餐饮服务食品污染情况、相关法规的要求、影响餐饮的食品的微生物考虑因素以及微生物监控的建议,希望能够为从事餐饮企业食品安全管理者提供微生物控制的思路。
The pollution of foodborne microorganisms is one of the important sources of food safety risks in the catering service link.This paper mainly introduces the food pollution situation in catering service,the requirements of relevant laws and regulations,the microbial considerations affecting catering food and the suggestions of microbial monitoring,hoping to provide microbial control ideas for food safety managers engaged in catering enterprises.
