摘要
透明质酸钠(Sodium Hyaluronate,SH)是透明质酸(Hyaluronic Acid,HA)的钠盐形式,透明质酸及其盐是广泛存在于人体内的生理活性物质,对人体的生理功能具有调节作用。2021年透明质酸钠正式获批为新食品原料,可应用于普通食品添加,透明质酸钠及其食品拥有更广阔的发展前景。本文综述了透明质酸钠对人体的生理调节功能、近年来在食品方面的应用及未来发展趋势。
Sodium hyaluronate (SH) is the sodium salt form of hyaluronic acid (HA).HA and its salts are physiologically active substances widely existing in human body and play a role in regulating physiological functions of human body.In 2021,sodium hyaluronate was officially approved as a new food raw material,which can be applied to ordinary food additives.Sodium hyaluronate and its food also have broader development prospects.This paper reviews the physiological regulation of sodium hyaluronate on human body,its application in food in recent years and its development trend in the future.
