摘要 介绍了膳食纤维的分类、结构及理化特性,综述了国内外近年来关于膳食纤维改性方法及其理化特性的相关文献,并对膳食纤维理化特性及其改性方法的发展方向进行了展望。 This review introduced the classification,structure and physical and chemical properties of dietary fiber,and summarized the relevant research literature on the modification methods and physicochemical properties of dietary fiber at home and abroad in recent years.The development direction of the physicochemical properties of dietary fiber and its modification methods were also prospected,in order to provide a theoretical reference for its efficient and comprehensive utilization.
