本土餐饮老字号翻红现象浅析——以顺德渔村为例

摘要 面临国内疫情反扑、管控政策调整、行业竞争日趋激烈等经营困境,位于“世界美食之都”——顺德的本土餐饮老字号顺德渔村是如何出奇制胜,在逆境中焕发新生活力,并且在行业竞争中取得优势地位,成功出圈翻红的呢?本文通过企业参访和消费者问卷调查的方法,尝试总结提炼出部分行动经验,试图为现存餐饮业老字号提供参考。 Faced with the backlash of the epidemic domestically,controlled policy adjustments,increasingly fi erce industry competition and other business diffi culties,as for Shunde as the“capital of the world’s gastronomy”,how can Shunde Fishing Village as a time-honored restaurant win unexpectedly in the face of adversity with new vitality,gain an advantageous position in the industry competition,and realize its economic recovery and growth?This study tries to summarize and comb through some experiences by visiting enterprises and collecting questionnaires from customers,and provide reference for existing time-honored restaurants.
